Signy thought as she mixed the powder that would become porridge. “I suppose it is Vanilla Sunrise,” she said at last. “I’m told that’s the best.”

DROP Dumpling soup

Important: You will need 1½ cups of cooked navy beans for this recipe. If you do not have any shelf-stable packs on hand, make sure to cook a dry batch ahead of time. You can also use any white bean instead.

Chop these:

1 medium sweet onion

2 stalks of celery

About 2 kg of potatoes, cut into whatever size chunks you think are acceptable for a soup

If you can’t get vat-grown spuds,1 do NOT substitute this with mash powder, it will not work. I suppose you could use cauliflower instead, but it is not going to be the same.

1 cup carrots

2 tablespoons of fresh dill

1 tablespoon of fresh thyme

1 tablespoon of dried rosemary (yes, dried. chop it as fine as you can)

3 cloves of garlic

Heat a large pot over medium-low heat.

Add 3 tablespoons of cooking oil.

Sprinkle in ¼ cup of all-purpose flour.

Use a spatula to toss the flour in the oil and keep stirring for about four minutes, until the flour clumps are a bit toasty.

Add the chopped onion and 1 teaspoon of salt. Toss the onions in the flour mixture. Keep stirring for five minutes.

Add garlic and stir for another minute.

Whisk in 6 cups of vegetable broth.

Add the celery, potatoes, carrots, dill, and thyme.

Add ½ teaspoon of sweet paprika and a dash of black pepper.

Turn the heat up and bring the pot to a boil, stirring often. Once it has started boiling, turn the heat down to a simmer and let cook uncovered for 25 minutes. Stir here and there.

Meanwhile, sift together 1 ½ cups of all-purpose flour, 2 teaspoons of baking powder, and ½ teaspoon of salt.

Mix in the rosemary.

Add 2 tablespoons of cooking oil and ¾ cup of milk (soy or oat, whatever you prefer).

Mix together until it looks like dough. You know what dough looks like.

Once the soup is ready, mix in 1 ½ cups of navy beans.

Drop spoonfuls of dough straight into the soup. You should have enough dough for fourteen dumplings,2 ish.
