LISSETTE’S STUFF IT BELL PEPPERS

"WE STUFF EVERYTHING IN LOUISIANA — PEPPERS, SAUSAGE, AND OUR BELLIES!"

INGREDIENTS

• 6 large bell peppers (use mixed colors!)

• 1 lb ground beef

• ½ lb smoked sausage, small diced

• 1 cup long-grain rice, cooked

• 1 can diced tomatoes (14.5 oz), drained

• 1 large onion, diced

• 3 celery stalks, chopped

• 3 garlic cloves, minced

• 2 Tbsp Cajun seasoning

• 1 cup pepper jack cheese, shredded

• Fresh flat-leaf parsley

• 1 cup beef broth (for dish)

METHOD

1. Slice tops off peppers; remove seeds. Blanch 3 min in boiling water.

2. Brown ground beef and sausage together; drain fat.

3. Sauté onion, celery, garlic in drippings until soft.

4. Combine meat, tomatoes, rice, and Cajun seasoning. Season boldly.

5. Fill each pepper generously. Arrange in buttered baking dish.

6. Pour broth in bottom of peppers, top with cheese.

7. Cover with foil; bake 350°F 30 min. Remove foil; bake 10 more min.

Mix your pepper colors for stunning presentation — red, yellow, and orange are naturally sweeter than green!
