INGREDIENTS
• 1 lb ground pork or beef
• ½ lb chicken livers, finely chopped
• 2 cups long-grain rice, cooked
• 1 large onion, diced
• 3 celery stalks, chopped
• 1 green bell pepper, diced
• 4 garlic cloves, minced
• 2 Tbsp Cajun seasoning
• 1 tsp dried thyme
• 1 cup chicken broth
• Green onions & parsley to garnish
METHOD
1. Brown ground meat fully in large skillet. Break up well.
2. Add chicken livers; cook until no longer pink — 4 min.
3. Add Holy Trinity; sauté 5 min until soft.
4. Add garlic, seasoning, thyme. Cook 1 min.
5. Pour in broth; scrape up all browned bits
6. Fold in cooked rice. Stir evenly.
7. Simmer on low 5 min. Garnish generously and serve.
Chicken livers ARE THE SECRET. They give dirty rice its earthy, deeply savory depth. Don't skip them — and maybe don't tell everyone!
